Mountain Rye: German style farmer’s loaf. The 3kg dough is baked freeform on the hearth which allows the dough to form its signature deep chasms in the crust as it spreads and then lifts in the heat of the oven. 60% whole grain rye flour 40% blend of high extraction wheat flours. The 60:40 blend of rye to wheat makes it a very approachable rye bread. Available as a whole, half, or quarter loaf.

Fermentation Pathway: 3 Stage Rye Sourdough (3-stufige Roggensauerteigführung) + 1 Stage Stiff Wheat Sourdough. Leavened exclusively with sourdough culture in a four stage process–alternating liquid rye, stiff rye, stiff wheat, and liquid rye pre-doughs over 32 hours to achieve a pleasant and unique balance of grain/malty sweetness and aroma, underlying sourness, good gluten development of the wheat, and a very healthy population of wild yeast and bacteria capable of lifting even the most dense of rye doughs.

House Rye: 60% whole grain rye, 40% high extraction wheat. Sibling to the Mountain Rye, our House Rye is made from the same dough following the same stepped fermentation but is proofed and baked in thick hardwood maple frames. The thickness of the wood frame prevents a crust from forming on the sides of the loaves while the top is free to rise high and develop a darkly caramelized sheen. The frame also helps the loaf retain more moisture while in the oven, and as a result the House Rye boasts perhaps the longest shelf life of all our breads.
